Sometimes magic happens when you just throw things together to cook. My wife is a whiz at that. But this time I had my own stroke of success. This morning I took on the challenge of making us breakfast. Often we just make peanut butter toast and bananas, a classic fav of ours. Or my wife will make homemade tortillas and eggs or something. She’s a classy Mexican woman. But this time I wanted to do something special for her, something a little more elaborate than usual. Now, my wife is a professional cook, and she can come up with combo ideas on the fly. Me, not so much. But I’m learning.
I had an idea to make a breakfast casserole, or maybe some kind of tasty breakfast sandwiches. While doing some dishes earlier, I came across a muffin pan, which gave me an idea. Rather than making one big pan of stuff, why not make individual muffins of goodness? Besides, it would be easier to gauge the cooking time that way, since I was pretty much making it up as I went. I found five ingredients that would work perfectly, and here’s the easy recipe I came up with. It was a hit!
Easy Cheesy Breakfast Casserole MuffinsServings: 8 muffinsIngredients:
- 2 slices of whole grain sandwich bread
- 3 slices of deli sandwich meat
- 1-1/2 cups of grated cheddar cheese
- 1-1/2 oz or 1 link of Peyton chorizo (or other meat like sausage)
- 6 eggs
Directions:
- Brown the chorizo.
- Wisk the eggs together in a bowl, then mix in the chorizo after it cools a little.
- Cut up the bread and deli meat into small pieces.
- Distribute the bread and deli meat pieces evenly into a greased muffin pan, filling about 8 of the cups.
- Spread the cheese evenly onto the bread and deli meat pieces.
- Ladle in the egg and chorizo mixture evenly, filling about half of each muffin cup.
- Bake at 375 degrees for about 25 minutes or until all the cups are nice and cheesy bubbly.
